Ingredients:
- 4 black cod fillets (about 6 ounces each)
- 4 tablespoons Aedan White Miso Paste
- 2 tablespoons mirin (Japanese sweet rice wine)
- 2 tablespoons sake (Japanese rice wine)
- 2 tablespoons sugar
- 2 tablespoons vegetable oil
Instructions:

In a small bowl, whisk together Aedan White Miso Paste, mirin, sake, and sugar until well combined. This will be the marinade for the black cod.

Place the black cod fillets in a shallow dish or a zip-top bag, and pour the marinade over the fish, making sure all the fillets are evenly coated. Allow the fish to marinate for at least 1 hour in the refrigerator, or preferably overnight for more flavor.

Preheat your oven to 400°F (200°C).

Heat a large ovenproof skillet or non-stick frying pan over medium-high heat. Add vegetable oil and swirl it around to coat the pan evenly.

Remove the black cod fillets from the marinade, letting any excess marinade drip off. Reserve the marinade for later use.

Carefully place the fillets skin-side down in the hot pan. Sear the fillets for about 2 minutes until the skin is crispy and browned.
