  • 2 lemons, thinly sliced

  • 1/2 cup sun-dried tomatoes, roughly chopped

  • 3 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • Salt and pepper, to taste

  • Fresh thyme sprigs, for garnish


  1. Preheat the Grill: Preheat your grill to medium-high heat.

  2. Prepare the Sardines:

    • Rinse the sardines under cold water and pat them dry with paper towels.
    • Place the sardines on a large baking sheet or platter.
  3. Marinate the Sardines:

    • In a small bowl, mix together the olive oil, minced garlic, dried oregano, dried thyme, salt, and pepper.
    • Brush the sardines generously with the olive oil mixture, making sure to coat them evenly.
  4. Add Lemon and Sun-Dried Tomatoes:
