Ingredients:

  • 2 cups of day-old short-grain rice
  • 1 lb Dungeness crab meat
  • 2 eggs
  • 1 cup peas
  • 1 cup diced carrots
  • 3 tablespoons soy sauce
  • 2 green onions, sliced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Directions:

  1. Prepare the Eggs: Heat a tablespoon of oil in a large pan over medium heat. Scramble the eggs until just set, then remove them from the pan.

  2. Stir-Fry Vegetables: Increase heat to high, add the remaining oil, and quickly sauté the carrots for about a minute. Add peas and continue to sauté for another minute.

  3. Add Rice: Introduce the day-old rice to the pan, breaking up any clumps. Stir well to combine with the vegetables.

  4. Season: Pour soy sauce over the rice mixture and stir. Season with salt and pepper according to taste.

  5. Mix in Crab and Eggs: Lower the heat to medium. Fold in the crab meat and scrambled eggs, taking care not to over-stir to keep the crab pieces intact.

  6. Serve: Once everything is warmed through, sprinkle with green onions. Serve the fried rice hot.

This Crab Fried Rice recipe is designed to be easy and flexible, perfect for a quick dinner that doesn't compromise on flavor or quality.
