Turbot is a flatfish that camouflages itself in the sand at the bottom of the sea. This Turbot has green and brown spotted skin with a granular illusion, much like the surface where it dwells. Its flesh is a firm, glowing bright white with a large flake and mild flavor. One turbot yields four fillets with very few bones that are easy to remove.
