Yokoi's Edo-Tannen-Su Seasoned Vinegar is a bold, full-bodied red vinegar made from long-aged sake lees that naturally caramelize over time. The result is a vinegar with rich depth, mellow acidity, and a touch of sweetness, rooted in techniques from the Edo period.
Traditionally used for Edomae-style sushi rice, this vinegar adds a warm amber tint and layered flavor. It’s also excellent in dressings, pickles, and marinades where complexity and brightness are key.
