Dorade is a relatively small, unassuming fish with a silvery skin and white flesh. It's mild, sweet flavor is perfect for any preparation that highlights the flavors of the Mediterranean. Dorade pairs well with assertive sauces which feature local flavors - rosemary, bay, saffron, or just a good olive oil and squeeze of lemon. 

Dorade can be braised and used in stews, which is often featured as an essential ingredient in the Provence's classic Bouillabaisse. Because the layer of fat between the skin and flesh holds everything together so well, it can also be grilled, pan fried, or roasted. Dorade mild flavor serves as a great protein to pair with a sauce where the sauce is the highlight - such as a hearty garlic aioli or a light herb vinaigrette.

Store your seafood in the coldest part of the refrigerator at 32 degrees for up to 3 days.

 

In the refrigerator we recommend removing the fillets from their packaging and wrapping them carefully in 2 layers of paper towels to absorb any moisture and firm the fish up for cooking and consuming.

 

If you don’t plan to consume the fish within 3 days, simply place in the freezer.

 

To thaw: place seafood in the refrigerator overnight.
