Togo-Su Ume Shiso Vinegar is a fragrant, sweet-tart Japanese vinegar made from the naturally fermented brine of ripe ume plums and red shiso leaves. Harvested at their peak and aged for over a year, the plums produce a vibrant brine, while the shiso contributes a striking hue and herbal complexity.
This uniquely balanced vinegar is excellent in small amounts to brighten dressings, splash over grilled vegetables, season rice, or finish meats and seafood.
