Haku Smoked Shoyu is a rare and exceptional soy sauce from Kyoto Prefecture, crafted using ancestral methods of the mushiro koji process. After traditional brewing and aging, the shoyu undergoes a meticulous cold-smoking process unique to the Haku family company, exclusively using Mizunara hardwood—a type of Japanese oak. This imparts a lively smoke flavor, resulting in a beautifully balanced, lightly smoked aroma and taste. Typically used in moderation as a finishing shoyu, it delivers a uniqueness and complexity desired by today's finest chefs.
