So special to be able to get these springtime-only wild leeks imported from West Virginia! They made a great shrimp, leek and snow pea soup!

I purchased two pounds. Some bulbs have turned brown and some start getting filmy. I contacted the store and was told this is normal. I disagree. A few leaves also have turned yellow. Pics were taken only shortly after package was delivered.

L had no idea a pound of ramps was so huge. Now I just read recipes and plan what is next! Made a ramp ramp risotto from Serious Eats. Delicious.

Spring brings the gift of ramps.

The ramps arrived incredibly fresh, and they were extremely flavorful. We enjoyed them roasted with olive oil and a little salt. Expensive, but worth treating yourself once a year.
