Notes of Grass/ freshly Pressed Olives/ Pepper
This Italian oil is from Umbria on the Tuscan border near Montepluciano and Cortona. It derives its perfect balance from Tuscany’s big, strong tradition and Umbria’s more mellow background.
Siloro is the finest oil made by Olivestri. Made in very small quantities with the utmost care and attention to quality, with a select mix of olives (Leccino, Frantoio, Moraiolo, Dolce Agogia) that are picked starting in late October to insure a high percentage of under-ripe fruit, producing the golden-green color and an extraordinarily low .2 degree of acidity, with a perfect balance between fruit and acidity. The olives are always pressed within 24 hrs. of being picked to insure a fresh-tasting oil very high in polyphenols which are the good-health promoting anti-oxidants that reduce LDL (bad) cholesterol.

This olive oil won the Gold Medal at the Olive Oils of the World competition in the category of D.O.P. Umbria.
