Number 1 matsutake closed cap mushrooms. Matsutake mushrooms are a rare delicacy that boast a distinct earthy and piney aroma. They make a fantastic addition to fall dashi based soups. They also make a satisfyingly meaty skewer, if grilled or broiled simply with a neutral oil and salt to allow the flavor of the mushroom to shine. As part of our QC process we split each mushroom immediately before packing.
