Though I prefer the leaner Copper River salmon, this variety, because of its higher fat content, works better for grilling. Here I baked it in foil accompanied by a baked green bean, corn and tomato salad, all topped with a coconut milk and dill dressing.

I thought Loch Duart salmon was my favorite but this King salmon from Alaska is amazing. So Much omega3 fat. I smoked lightly ! Perfect lunch.

We ordered the wild king salmon from Alaska since we are unable to get wild local pacific king this year in California. The Alaskan salmon was very pricey ($50 per pound, including the $7.50 handling fee. However, it was best salmon we've had in years. So fresh. It was amazing. We've been talking about it all week. Ready for more. Wish I had taken a photo. We planked it on alder with a basil chive butter, asparagus and smashed potatoes. Yum!

Simply grilled next to an avocado, 220 C for 6 and 1/2 minutes total for a perfect rare to medium rare. Mostly on the skin side. Melt in your mouth goodness and even more so than the quite good formed king salmon from the southern hemisphere
