The Country Ribs are such a versatile cut, the possibilities are endless! Untouched, it can be treated as a roast or braise, just like you would a pork shoulder roast or loin roast (see photo, roast on the right). Remove the bones entirely, and you have a coppa roast, which can be roasted or cured! Slice them along the bone into chops and they can be braised, grilled, or pan-fried (see photo, 3 chops on the left).
