This is a beautiful fish scaled and gutter whole fish, that is farmed in Spain gives you a consistent, eco-conscious option with the delicate flavor and tender and flaky texture. Cook it whole with foaming brown butter and capers... finish with lemon and a pat of whole butter.  Nothing better.  Very limited supply.  Weight is approximately 500-600 gm each.
