I had gotten this hamachi before and it made beautiful nigiri. These pieces were more friable and I could only use a small amount for nigiri - the rest went to ceviche. Luckily I had also gotten some hamachi from Anna's Seafood which worked fine. I know it is hard to get hamachi with the right texture to cut with Japanese knife for nigiri or sashimi.

The hamachi is my favorite fish to buy here! Fantastic to eat as sashimi~ I had friends over to make hand rolls with a few other cuts but this was definitely the best!

We cooked the mussels with a honey beer sauce and ate the hamachi as a side sashimi dish with salad etc. Fine dining at its best :-).

Excellent simply sliced, with ponzu sauce, an avocado, and chipotle flakes. This hamachi almost always gets eaten before I have the patience to cure it with kombu or a spirit

Truly melt- in-your-mouth tender and delicious. This was perfect hamachi for sashimi. It was fresh and delicious. I could barely pick it up with chopsticks - it was so tender. The only problem was I wanted more.
