PREPARATION INSTRUCTIONS

Brine for 30 minutes with salt, sugar and any aromatics you like.  Then hold under the hottest running tap water you can handle to remove from the membrane. 

Give them a splash of sake or gin for flavor, let sit six hours and serve on rice or on brioche with a slathering of our Bellwether Creme Fraiche and locally-grown Brokaw Gem or Brokaw Haas Avocado! Sold separately.
