As usual, the sea bass was superb. Did it with a miso glaze made with the sweet white miso. It’s essentially a “cube” of fish, so it’s a little difficult to cook through properly, but attention will pay off.

Chilean Sea Bass- Marinated in preserved lemons and shallot, baked in the tagine.
Served with couscous and Brussels sprouts with preserved lemon Beurre Blanc. I was even impressed and I cooked it.

We have not experienced anything like these thick fresh pieces of Chilean Sea Bass. No bones, rich in flavor and so flaky, flavorful and easy to prepare. They were worth the cost to prepare and serve at home.
