Easy to shuck, shells were solid and did not crumble, oysters were briny without a hint of a spawniness. Filled to the brim with liquor, you could tell they were super fresh!

These oysters (Beausoleil and Miyagi) bring in the beautiful flavors of the sea and so delicate in the palate. It was perfect for us who wanted to make a small oyster sample platter as our starter for dinner. Super fresh. Super yummy!

A little bigger and sweeter than the miyagi's! we really enjoyed them. plain with a squeeze of lemon juice. or with a mignonette with shallots, lime juice and cilantro. So easy to shuck.

You can't go wrong with any of the oysters from Four Star Seafood. Extremely fresh and well-handled all the way to my front door. All can be eaten raw despite not being marked explicitly, since the term "sushi grade" is reserved for fish/shellfish. The Beausoleil's are a light tasting Canadian oyster, and very easy to shuck. They are a "beginner's" oyster I bought in an attempt to have my young daughter appreciate raw oysters. My older son and I found them lacking the brininess we prefer, so these won't be part of my regular rotation.
