Kyoto Sweet Miso is a lightly fermented miso popular in Kyoto for its mellow, slightly sweet flavor and smooth texture. Made with rice koji and soybeans, it’s more delicate than long-aged miso and perfect for those seeking a gentler umami hit. Use it in classic miso soup, or try it in marinades. It’s the star ingredient in miso-marinated black cod and other savory-sweet dishes.
How to use: Blend ¼ cup miso with ¼ cup mirin, ¼ cup sake, and ¼ cup sugar. Marinate 1 lb of fresh black cod in this mixture for up to 4 days. Broil until skin blisters and flesh is cooked through.
