I had really high hopes for these prawns for New Year's Eve. I had read on line that spot prawns exude an enzyme upon death that makes the meat mushy so they had to be cooked promptly. I also read from a frozen packager of spot prawns that they had an immediate cold brine process that protected the meat. So I was optimistic. Upon gently defrosting the prawns, they were incredibly soft and mushy. Cooking didn't help. I would not have eaten these as sushi/sashimi as planned. Flavor was amazing. Experience is what you get when you don't get what you expect. I am now educated. 4-star Seafood was great at service, delivery logistics, etc. Will order again but no more spot prawns unless they are alive.
