Was really looking forward to duck eggs for this morning's egg dishes. My biggest take away - they were undifferentiated from chicken eggs. I asked the five people who ate them if they notice anything docent about the eggs - they said no. I then told them they were duck eggs - were they sure they didn't notice any difference from our normal chicken eggs. Nothing.
So - product was perfectly fine, but at $30/dozen, wasn't necessarily worth the premium over other eggs.

Very lightly scrambled in black truffle butter with a little bit of creme fraiche. Paired with uni from a large red urchin, pure decadence!

I'm a major duck egg eater and this farm is doing it right - totally regenerative. And the farmer/rancher is a very nice ethical man. I called him and we chatted for about 20 minutes and he invited me to down to hang with the ducks and other animals. Duck eggs are wonderful for cooking in a lot of butter either over easy or scrambled and if you bake get ready for amazing baked goodies.
