Handcrafted using centuries-old techniques, Daimyo Binchotan Charcoal is made from hand-selected, mature oak branches in Korea, then fired in clay kilns at 1200°C using the traditional pyrolysis method. This process captures carbon and minerals inside the wood, creating a dense, high-purity charcoal that’s 90% carbon and rich in potassium, magnesium, calcium, and phosphorus.

Korean Binchotan differs from its Japanese counterpart in its larger diameter and longer burn time, offering a consistent heat source that chefs rely on for precision cooking. Though it’s not the hottest fuel, it’s incredibly stable and clean-burning—nearly smokeless, with virtually no flavor interference—making it ideal for grilling delicate ingredients and enhancing natural flavors through radiant heat.
