Shelburne Farm's 2 year Cheddar is perhaps their most well known cheese. Aged for a minimum of 2 years, this cheese has the classic Vermont cheddar cheese profile: acid forward sharpness, some minerality, and sweetness on the back end. Great to snack on any time of year, but especially during apple picking season and deep winter days. Made with Raw Milk taken from pasture-raised Brown Swiss cows. In addition to being delicious, Shelburne Farms is also a nonprofit educating for sustainability on a 1400 acre farm and Notional Historic Landmark.
Try pairing these with dry ciders, Vermont maple syrup, and patés. which provide an excellent complement to the acid from the cheese.
