He crafts his prosciutto from only heritage breed pigs such as Red Wattle, Tamworth, and Old Gloucester, that are raised across the Midwest by a network of small family farms. Utilizing heritage breeds helps to preserve both the genetic diversity and rich history and stories behind each unique breed. Plus they taste delicious! The result is a prosciutto that is sweet, complex, and nutty. The fat on this prosciutto is something to be coveted. Add some on your next cheeseboard, enjoy it on a baguette with butter and olive oil, or drape some over a burrata and persimmon salad.
