Sean Schoeben, our Head of Operations and in-house culinary expert, brings you his favorite recipe from his time as an Executive Sous Chef at the Four Seasons Resort in Hawaii. Aloha! 

Note: This kit also includes cooking equipment (potato ricer) for preparation!

Ingredients (comes with):

  • 4 heads of garlic
  • 3 lb organic, locally-grown purple sweet potatoes
  • coconut milk
  • 1 jar of Mieli Thun honey (250G)
  • cooking instructions (provided electronically)
  • plus, a super handy potato ricer!

You’ll need:

  • 1 tablespoon olive oil
  • flaky sea salt and crushed black pepper to taste
  • pad of butter or vegan baking stick
  • fresh green chives or green onion for garnish (if you're looking to get fancy or have some extra from another dish - the purple / green color contrast looks really stunning on the table!)

About this recipe (from Sean):

Purple sweet potatoes are the BEST side dish!!! Not only do I love them for Thanksgiving, but these are actually perfect anytime of year. Especially as a fishmonger, I recommend these all the time when people ask me to recommend the best seafood side dish. I really wanted to introduce our home chefs to this particular purple potato.

In Hawaii, locals often refer to these special potatoes as beni imo or Okinawa sweet potatoes. My favorite way to prepare them is to make a mash, with decadent coconut milk, garlic, sea salt, and a dash of black pepper. These were a year round menu staple during my executive chef days at the Four Seasons in Hawaii.

Healthy and savory, this side dish is also just plain beautiful. It makes a statement on any Thanksgiving table, with a pop of vibrant, delicious deep purple. Plus, it's vegetarian, vegan, and even gluten free.

For me, good ingredients are just as important as the tools that you use to cook them with. This is why I insisted on including a potato ricer with this kit. The ricer is key to making this mash perfect. It's actually my secret chef weapon for the perfect potatoes. I hope you have fun using it for this recipe.
