We have a very limited amount of this super special leafy green. Simply strip away the outer bitter leaves (save them, they go great in soups, stir-fries, and pasta) to reveal the inner heart, slice thinly and let soak in ice water for 30-45 minutes, and you're in business! Puntarelle's celery like core is delicious when eaten with anchovies, olive oil, and lemon. These are some pretty large heads, each one is ~3#.
