The ocean trout was such great quality when it arrived.
Amazing! Super fresh and delish. I took the belly portion off, the loin was pan seared and was delicious. recommend on the med rare side. crisped up the skin side of the belly with lots of spices. chopped up and added like a crouton into my salad. so much better than crouton.

Of all the salmon-like fish that Four Star sells, this ocean trout is my top pick for cooking. (I love their two types of farmed salmon, but I think they are best raw).
I cook this trout rare with nothing but salt and it has a wonderful flavor of the ocean. It reminds me of some of my favorite oysters. It's very rich and doesn't need anything.
Poke with local king salmon, tomatoes, sweet onion, and ogo limu. Great texture and richness
