Coming from Full Belly Farm just north of us in Guinda, CA, these Japanese Eggplant are thinner skinned than globe or Italian varietals of eggplant, and less bitter due to the fact that they have less seeds than other eggplant.  We love them for grilling, stir-fries, folding into pasta, and roasting.  Take advantage of all the beautiful summer produce we have right now and make a beautiful ratatouille with some of our costata romanesco squash, gold bar zucchini, and dry-farmed early girl tomatoes!
