Hedgehog Mushrooms - 8 oz

The hedgehog mushroom is a wild mushroom.  Its name derives from the fact that it has small soft quills under the cap instead of gills.  It is a wild mushroom with a fleshy, slightly convex, beige to light-brown cap and a white stem.  You can prepare hedgehog mushrooms in the same way as chanterelles.
