Dolciolio is made from more mature olives, harvested in the month of December, to give it a softer and more delicate flavor than the Primolio. The Olives are pressed within 12-24 hours to picking in order to preserves the flavor of the olives and to avoid any abnormal fermentation. The olives are cold pressed to conserve the full, original flavor of the olives. We recommend it with seafood salads, carpaccio, soups, grilled white meats, and fresh cheese.
