
The tri-tip is a classic Californian cut, and one of our favorites for the grill.
Cut from the bottom sirloin subprimal, tri-tip has excellent marbling and is very tender. Tri-tip is great for grilling, smoking, roasting, and can even be cut into steaks and cooked in a hot skillet on the stovetop. Err on the rare side — tri-tip is easy to overcook.
Each steak weighs ~2.5 to 2.99 lbs.
