Egosum Organic is a blend of Arbequina and Hojiblanca varieties. These varietals deliver a great aromatic complexity along with a mild, harmonious and balanced flavor. Given the versatility of the EVOO both for use in cooking and fresh foods, it also can enhance both savory and sweet dishes ranging from soups (gazpacho to creamy leek) to fruits (strawberries to cantaloupe) to pintxos of jamón and tomato sauces (alioli, pesto, mushrooms) to even chocolates.

From the same producer as our Marques de Valdueza oil, the olives for Merula are from the second harvest of the year. The added time on the trees gives this oil its characteristic flavor and a higher smoke point. The name Merula comes from the Latin word for yellow-beaked black bird, a bird that populates the Alvarez de Toledo family estate.
