Jim Reichert of Liberty Farms raises these beautiful Duck just north of us in Petaluma. A Pekin and Muscovy cross breed, these are some of the best ducks we've ever tasted: rich and fatty with a supreme depth of flavor. Duck legs are perfect for braising, roasting, and for making duck confit! Simply cure with salt, pepper, and aromatics for 24 hours and then cook slowly in a low temperature oven submerged in duck fat. Once tender, allow the confit to cool and use in your favorite duck confit recipes!
