This champagne vinegar from Martin-Pouret evokes a long history of vinegar making and the city of Orleans.  Located along the Loire river, Orleans had a long-standing history of vinegar making.  Merchant ships bound for Paris would offload any wines that had gone bad, which would be mixed with unpasteurized vinegar and aged, resulting in some of the finest vinegars in the region.  Once filled with over 300 vinegar makers and producing nearly 80% of the vinegar in France, Martin-Pouret is the producer in Orleans who is continuing to uphold the traditional Orleans process.  Less acidic and highly perfumed, perfect for zippy salad dressings or for brightening up pan-sauces.

Can be used wherever you would use lemon (but only in small quantities due to is strong taste) : summer raw vegetable salads (carrots, for example), taboulé, hot or cold fish, shellfish, desserts (to add flavour to a dessert, to town down the sweetness in a caramel dessert, etc.).Keep fresh and shake before use.
