Sashimi-Grade Seafood: 1lb Yellowfin Tuna, 100g CA Uni tray, 1/2lb Ora King Salmon, 1/2lb Albacore, 1/2lb Hamachi, 2oz cured Salmon Roe
Miso Soup: 1gallon bag of bonito flakes, Aeden miso
Rice & Nori: 1lb Koshihikari short grain sushi rice, 1pk toasted Nori sheets, White Shoyu, Rice Vinegar
Pickled Young Ginger and Grated Japanese Wasabi.
Comes with instructions for sushi rice, miso soup, & fish preparation.
Store your seafood in the coldest part of the refrigerator at 32 degrees for up to 3 days. In the refrigerator we recommend removing the fillets from their packaging and wrapping them carefully in 2 layers of paper towels to absorb any moisture and firm the fish up for cooking and consuming.
If you don’t plan to consume the fish within 3 days, simply place in the freezer.
To thaw: place seafood in the refrigerator overnight.
It's a very good question! In general, there is nothing regulatory that either makes something sushi-grade or not. We use our best judgement from being chefs to now being intimately connected to the seafood industry and also being a huge fan of sushi to determine whether or not something is sushi-grade. Some things help us make our decision.
One might be how the fish was bled. If a fish is not bled properly, it won't be good for sushi. Not because it isn't fresh, but the blood imparts a flavor that is undesirable for raw seafood.
Surprisingly, most of the fish used for sushi here is previously frozen for convenience. When served raw, the freezing doesn't affect the texture or flavor of the fish very much. However, we prefer tuna that hasn't been frozen.
Generally, we will recommend something as sushi-grade if we personally know how long the fish has been out of water, how well it eats raw (some fish will never be sushi-grade, because it doesn't have a nice mouthfeel), and how it's been treated after it was caught

This was so much fish! Everything was fresh and delicious, and the photo I submitted was dinner for two, and only half of what the "fish only" kit included. We loved eating it as sashimi, and ate the other half as poke for our next meal. The only tricky part was that some pieces of fish still had skin on, so some knife skills are required for this, and there were a few bones despite best intentions to remove. Definitely recommend this if you're up for a little DIY!
Such an amazing package! We had sushi for two nights, Uni pasta for one, and have some extras for fish tacos! We love this package, so thoughtful with all of the fixins!
I bought the sushi fish for a Galentine's Day with 6 ladies. I had most of the ingredients already but the fresh fish was key to a delicious evening.
We made a couple of rolls but everyone agreed making poke was the best.
There was plenty of fish for the 6 of us with lots of leftovers. I highly recommend for an at home sushi party.

We ordered the Grand Sushi/Sashimi Kit for our NYE dinner and enjoyed the selection of fresh fish! Our favorites were the Uni, Ikura, Salmon and the fresh wasabi (beats the powdered stuff any day). The local delivery option was super convenient as well.

Who better to provide fish and uni for a sushi fest than Four Star? The only thing that would improved the kit; twice as much rice and nori. We love sashimi but wanted more rolls and nigiri than the kit supported. We had leftovers for lunch today that were every bit as tasty!
My friends and I got this box as a treat during quarantine and we had a great time! It came with a print out for instructions for the miso soup and everything. The four of us could not finish this in one meal! If you're making rice for rolls for nigiri, you can easily feed 5-6 people. We had some questions for the order and called; the people on the phone were very friendly and answered all of our questions. We'll definitely be ordering regularly now! Now that we're more confident with making our own sushi, we will branch out and try buying some different types of sushi grade seafood.
We have so much fun with the kit. Everyone had an assignment and a work station….sushi rolls, sashimi, miso soup, rice balls. Loved the white shoyu! Fish was fresh, cold, and excellent. We will do it again, I am certain.
Fun way to spend the evening, this kit contains everything you need from start to finish for a super fresh and wide ranging sushi/sashimi experience. The picture is of a Poké bowl we made with the leftover fish. Portions were extremely generous.

Good sushi quality seafood. Uni was amazing. Everything was packed and cooled very well. Went with the whole kit and the miso soup was good as well. I do wish tofu was included for the miso soup, would've be a nice addition. Price is high but considering the quality, I do not regret the purchase at all, just not sure if I will purchase again. It is absolutely worth a recommendation for a one time experience.
